DOI: 10.1002/sscp.202000077 The cover picture shows the collagen structure with several crosslinks then the isolation of the intact GOLD, MOLD and pentosidine advanced glycation end products by acid hydrolysis. The separation was then carried out on a Cogent Diamond Hydride column under isocratic conditions with a short time of 5.5 min. The eluted peaks were detected on the ultraviolet, fluorescence, and mass spectrometry detectors in which fragmentation by tandem mass spectrometry was measured. This method was then used to monitor the formation of advanced glycation end products in gelatin sample treated with glucose.
