The use of the dielectric constants of various polymers and flavour compounds was investigated to develop a practical relationship for the prediction of ‚flavour scalping’. A plot of equilibrium sorption vs. the dielectric constant (DEC) showed little correlation. However, the correlation improved significantly when a plot of equilibrium sorption vs. DEC was made for each individual polymer. Insignificant R 2 values for polar and non‐polar polymers indicate that the DEC may not encompass all of the factors for an accurate prediction of sorption by flavour compounds.
