Schizophyllan solutions in the presence of borate ions were studied in order to evidence physical interactions occurring in aqueous media. The experiments were conducted using viscometric measurements. Changing the added salt was found to have a dramatic effect on the properties of the solutions, and the results were interpreted in terms of water structure variations.
