The polymorphism of 1,3‐dipalmitin, 1,2‐dipalmitoyl‐ sn ‐glycerol, 1.2‐dipalmitoyl‐ rac ‐glycerol has been examined by X‐ray diffraction, IR spectroscopy and Raman spectroscopy and differential scanning calorimetry. The respective spectra and thermographs are presented for these polymorphs. Optically active 1,2‐diglycerides exhibit very different thermal behaviour from the optically inactive 1,2‐diglycerides. A novel HPLC system was devised for the separation of the diglycerides.
