The literature reflects a divergence of opinion on the subject of the effect of rigor mortis and ageing on muscle collagen aggregation in food animals; there is little information concerning fish. The object of the present study was to document the effect of rigor mortis and ageing in trout ( Salmo irideus Gibb) on the physical and biochemical characteristics of muscle connective tissue and its main component, collagen.
