Chufa ( Cyperus esculentus var sativus Boeck) could be a new source of dietary fibre. The total dietary fibre content of chufa is very high: 19.0% (w/w) average (calculated on dry matter). The neutral sugar composition of the dietary fibre consists mainly of glucose and xylose. The average content of phytic acid is 724 mg per 100 g.
