Microbiological evaluation of cereal protein

The protein quality of twenty‐three varieties of wheat, ten varieties of rice and seven varieties of triticale was evaluated microbiologically using Tetrahymena pyriformis W. The wheat varieties CBW 12, CBW 392, CBW 396 and C 306, the rice varieties Jay a and PR 228, and the triticale varieties TC 174 and TCB 692 were found to be best nutritionally. The relative nutritive value showed a positive correlation with lysine for wheat, rice and triticale. The relative nutritive values for wheat, rice and triticale were found to be quite close to the reported net protein utilisation values.
