Screening for mutagens in norwegian foods by the ames test

Twelve Norwegian food products prepared in an ordinary domestic manner, were screened for mutagenic activity towards Salmonella typhimurium strains. Mutagenic activity towards the frameshift mutations strains (TA1538 and TA98) was observed in the basic organic extracts from fried fish cakes and fish pudding. Metabolic activation with rat liver homogenate (S9) was required. The ten other food items studied were found to be devoid of mutagenic activity.
