The conditioning of wheat. Moisture migration between the components of a mixed grist, and its effect on milling performance

Abstract Canadian and UK wheats have been conditioned separately to different moisture levels, then blended and held for varying periods before milling. A progressive and substantial moisture migration between the components of the blend was observed, but the extent of such migration had a negligible effect on milling performance. This is interpreted with reference to earlier work on the conditioning of the individual wheat types.
