Enzymic determination of glucose in foodstuffs

Determination of D‐glucose in foodstuffs was performed either with free glucose oxidase or with glucose oxidase bound to a glycidylmethacrylate polymer. Glucose oxidase immobilised on a nylon net was used for preparation of an enzyme electrode specific for glucose. Results of analyses obtained by the enzymic methods were compared with the determination of glucose by a common Steinhoff method and ion exchange chromatography.
