The suitability of the lipofuscin assay for lipid peroxidation products in apple fruit has been investigated. Material with similar fluorescent properties to lipofuscin was extracted from apple. However, this fluorescence could be explained by the presence of cinnamoyl compounds and carotenoids in the extracts.
