On the alkali degradation type of rice kernels

When immersed in dilute potassium hydroxide solution, milled rice kernels of different varieties undergo different patterns of degradation. Five types of degradation, designated A, B, B 1 , C and D have been identified. These types correlate well with other quality indices of rice.
