The ternary phase diagram of saponin‐sunflower oil monoglycerides‐water is dominated by an extensive region consisting of a liquid phase. in this micellar solution there seems to be a gradual change from an aqueous to a hydrocarbon type of continuous medium. a lamellar liquid crystalline phase separates these two liquid structures at high water content. a viscous isotropic cubic phase is also observed in this phase diagram which according to its x‐ray diffraction is the same phase as occurring in simple monoglyceride‐water systems.
