A Technicon AutoAnalyzer was adapted to carry out a continuous assay of α‐amylase activity to detect the presence of α‐amylase inhibitors. The manifold design is based on the same sequence as the Bernfeld reducing‐sugar procedure and allows sufficient time to detect those inhibitors which act slowly. The technique can be used to assay protein amylase inhibitors from wheat at concentrations as low as 1.7 n M . It may also be used to detect amylase activity which can continue in spite of the presence of inhibitors.
