Abstract This paper describes the development of a quantitative, colorimetric technique for the determination of feruloylquinic acids, caffeoylquinic acids and total chlorogenic acids in synthetic mixtures and green coffee beans. The results are analysed statistically and discussed with reference to previously published data.
