Shallenberger's sweetness hypothesis in the sugars is tested by the selective blocking of single positions around a sugar ring with O ‐methyl groups and sensory evaluation of the products. The location of Shallenberger's AH, B system in certain sugar structures by the identification of superfluous hydroxyl groups was anticipated. Additionally, the AH, B system in β‐D‐fructopyranose responsible for the intense sweetness of the sugar is located by sensory and infrared spectral evaluation of structurally analogous compounds.
