A description is given of the quantitative determination by gas chromatography of soluble substances contained in sweet corn ( Zea mays saccharata ). The results obtained from these determinations have shown that quotients of sucrose to fructose and sucrose to glucose concentrations may be a good measure of the degree of maturity attained. Moreover, gas chromatographic analysis appears to provide a specific method of quality control for stored sweet corn.
