Abstract The conditions for a rapid and reproducible procedure for the determination of fat in foodstuffs, based on extraction with a mixture of chloroform and methanol, are described. The procedures gives results comparable with those obtained by methods based on either acid or alkaline pretreatment of the sample and also provides an extract of the lipids in the food in a form suitable for qualitative investigations.
