Photolysis of the principal flavouring constituent in grapefruit, nootkatone, leads to a number of products. One of these has been isolated and its structure has been determined by a variety of spectral methods on the parent compound and on its derivatives. The product arises by an unusual photochemical transformation which is a result of the unique geometry of the nootkatone molecule.
