Some β‐glycosidases in barley and other cereals

The levels of β‐glucosidase and β‐galactosidase in barley, wheat, oats and rye were compared. It was found that while the nature of these enzymes in the cereals appeared to be the same, there was a marked difference in the ratio of their occurrence in the cereal seed. A comparison of β‐glucosidase and β‐galactosidase activities in different varieties of barley growing at different centres showed that enzyme activity was significantly affected both by variety and environment.
