Abstract Composite food products containing salt, monosodium glutamate, fat and a commercial beef, whale or yeast extract or chicken meat, or hydrolysed protein were examined, after extraction of the fat, by two‐dimensional paper chromatography. Characteristic constituents of the extracts were resolved and the recognition of extracts is discussed. Commercial soup tablets and cubes from European countries were examined for whale extract by the method described: it was detected in all four chicken tablets, in two out of five cubes and in five out of twenty‐three soup tablets.
