Abstract The types and numbers of organisms present in dry and (especially) liquid sugar are discussed with special reference to the soft drinks industry, production of commercial sugar syrup and sugar for canning purposes. The use of filtered air and sterilisation by ultraviolet lamps in liquid sugar manufacture are discussed.
