Vertical starch‐gel electrophoresis of wheat proteins is carried out in an apparatus in which a buffer‐filled slot in the gel is flushed at intervals into a fraction collector. The protein fractions obtained are very sharp, sometimes running as single bands upon further starch‐gel electrophoresis.
