Effect of castration on composition of the depot fats of monozygous twin cattle

Castration of male monozygous twin cattle slaughtered at 25 months of age is followed by a slight increase of the iodine value of perinephric, mesenteric and subcutaneous fats. This increase is due to a somewhat higher content of oleic acid and a lower content of stesric acid in the steer fats than in the corresponding bull fats. The steers tend to deposit a slightly yellower external fat than the bulls. Apart from castration, very great differences between the fatty acid composition of external and internal fats were observed.
