Yields and flavour of mycelium of edible fungi grown in stirred, aerated culture have been investigated. Satisfactory harvests can be obtained, but flavour, when present, is only weak. Methods for the enhancement of flavour after the harvesting of the mycelium have been tried but have been unsuccessful.
