Flour examination has been regularly carried out by the Department of the Government Chemist since 1946 on behalf of the Ministry of Food and other government departments. The records show the changes in the nutritive value of the flour supplied for home consumption since the war, taking the desiderata of the Post‐War Loaf Conference (1945) as the basis for comparison. The concurrence of vitamins of the B group is discussed with particular reference to the manner in which the production of the flour by the divides process simulated straight‐run flour of the required extraction rate. The extent of variation of the amounts of nutrients is discussed and artificial additions of material are shown to have a marked influence.
