Some problems of transient‐state conduction in the cooling of fish fillets

Theoretical calculations and experimental results are presented for the rate of cooling of fish fillets packed in boxes with ice (average temperature of the fish at the time of packing about 50° F). It is shown that the temperature within a mass of fillets can be predicted with considerable accuracy. The application of the results to commercial practice is discussed.
