Bitter principles have been isolated as solid foams from the fruits of several members of the Cucurbitaceae. Four bitter principles, provisionally named cucurbitacin A, B, C and D, were obtained in the crystalline state. The nature of the functional groups of cucurbitacin A, C 28 H 40 O 8 , was investigated and a detailed study of its hydrogenation has been carried out.
