An enzyme system producing acid in honey has been demonstrated. Examination of the acids removed by an anion‐exchange resin supports the findings of Nelson & Mottern (1931) that citric and malic acids are not responsible for the greater part of the acidity of honey, and evidence of the presence of keto‐acids has been obtained. A field test in which sugar syrup was fed to bees having no other food supply indicates that acid‐producing enzymes are introduced into the syrup by the bees.
