Vibrational Raman spectroscopy has been used to study the conformation of the extracellular enzyme levansucrase. Secondary structure analysis by the method of Williams shows 51% β‐sheets, 18% total α‐helical structure (from 7 to 16%) and modifies the environment of the Trp and Phe residues and also more of the CC, CN, CS and CH 3 groups.
