A new structural phase change at − 6 °C was found in aqueous dispersions of distearoyl phosphatidylcholine. The thermotropic gel‐gel phase transition at −6 °C exhibits first‐order characteristics and is equivalent to the barotropic phase transition on chain length is discussed.
