A rapid method for the continuous‐flow determination of laccase activity in grape must has been developed. The system was automated and permitted online measurement with less than 5% error. The feasibility of the system in industrial conditions was proved in vinification plants with grape musts and wines. The capacity of musts to consume oxygen during sulphur dioxide treatments was also followed.
