Liquid chromatography using cellulose powder as the adsorbent was applied in the fractionation of the carbohydrates in the hydrolyzates of gummy substances, and the presence of d‐xylose, I‐arabinose, d‐glucose and d‐galactose was confirmed. The fractionation of the amino acids in the hydrolyzates of the gummy substances was carried out by ion exchange chromatography and the amounts of aspartic acid, serine, glutamic acid, proline, glycine, alanine, cystine, valine, methionine, isoleucine, leucine, tyrosine, phenylalanine, histidine, lysine and arginine were determined.
