In the near future, nisin may be used within the Brewing Industry to control lactic acid bacteria. Therefore, there is a need for a rapid and reliable assay procedure for this bacteriocin. Nisin is presently estimated using various bioassay methods, many of which require several days incubation before results are obtained. The technique of ATP bioluminometry has now been utilised for the assay of nisin in beer and wort using a strain of Lactobacillus brevis as the test organism. The assay is rapid, and can be used to estimate nisin within the range 0–120 units ml −1 with a percentage error of less than 5% .
