Hordenine can be nitrosated by gaseous oxides of nitrogen (NO x ) or by nitrite at acidic pH to form N‐nitrosodimethylamine (NDMA). Descending paper chromatography of an amine fraction from malt shows that a precursor of NDMA co‐chromatographs with hordenine. Measurements of hordenine in malt show that it is present at levels greatly exceeding those needed to form high levels of NDMA. A rapid method for the measurement of hordenine in malt using High Performance Liquid Chromatography (HPLC) is described.
