The technique of micro immuno‐electrophoresis has been used to study variation within single yeast strains. Investigation of brewing yeasts and their variants demonstrated that a change of a fermentation property was accompanied by a change in the antigenic structure. Small variations in fermentation characteristics, as well as a larger changes such as respiratory deficiency, can be detected by this serological method.
