The properties of available detergents are reviewed in relation to their chemical composition and physical behaviour, with particular emphasis on their use in brewing plant, both as cleaning agents and as sanitizers. The compatibility of different components of detergent mixtures is discussed, a brief account is given of in‐place cleaning and attention is drawn to the difficulties inherent in the cleaning of the present range of aluminium kegs.
