The alpha‐acid contents of sulphured and unsulphured hops were similar although on physical examination the sulphured were rated more highly than the unsulphured. Beers brewed with unsulphured hops had slightly higher isohumulone contents than sulphured‐hop beers, but, on average, there was no difference in preference between the sulphured‐hop beers and those brewed with unsulphured hops.
