The proposed method utilizes the fact that bright beer does not absorb any radiation in the near infra‐red region whereas particles in suspension scatter at this wavelength in the normal way. This affords a method of measuring yeast concentration directly in undiluted beer. Agreement with counting chamber determinations is good and the technique is simple and rapid.
