A method for the estimation of residual carbohydrate in brewer's spent grains, based on acid hydrolysis, is described. A straight‐line correlation is shown between the results obtained by the proposed method and by the mashing method described by Lloyd‐Hind. The relationship of residual carbohydrate in the spent grains to the weight of malt soluble solids obtained in the wort is deduced theoretically.
