A rapid method for the separation of fusel oil from beer and for quantitative analysis of a number of its components by gas‐liquid chromatography is reported. Quantitative analyses for n ‐propanol, iso butanol, 2‐methyl butanol, 3‐methyl butanol, β‐phenyl ethanol, ethyl acetate, and iso amyl acetate in different types of beer are presented. The effect of these components on beer flavour is discussed.
