Though trained as a chemist, Horace Brown provided outstanding contributions to the brewing literature as a microbiologist and as a biochemist, whilst he also made pioneer studies in important fields of plant physiology. He introduced microbiological control to breweries in Britain, and removed much of the empiricism of malting, whilst his emphasis on the significance of nitrogenous compounds in the brewing process set a pattern of research which has still far to go. He respected empiricism, but insisted that it should be replaced wherever possible by sound knowledge, and accordingly advocated organized research and a system of education which would enable the brewer to take advantage of the results of research. His prestige facilitated the introduction of research and educational schemes for the British brewing industry, and something of the outcome of his vision is now beginning to be felt.
