The hydrolysis of a wide variety of substances—including polysaccharides, oligosaccharides, glycosides, proteins, peptides and phosphates—is catalysed by enzymes present in barley embryos which have been cultivated In vitro . Some of the enzymes concerned appear in liquid culture media, and some are released from the scutella of embryos cultivated on the surfaces of gels.
