The sedimentation curves (cell count against time) of a number of different yeasts in beer have been examined. The general form of these curves is of two straight portions joined by a short elbow. It is suggested that the flocculating power of a yeast can be expressed in terms of the co‐ordinates of the intersection of the extrapolated straight portions of the curve.
