Counting of bud‐scan on yeast cells has been carried out using a simple technique. In a system of continuous fermentation maintaining high concentrations of yeast, a higher proportion of newly‐budded cells is present in the out flowing yeast than in the fermenter. In conventional top‐fermentation, there is a selection of younger cells in the yeast head.
