On the principle of regularity of nitrogenous composition of barley, it is to be expected that the permanently soluble nitrogen of wort will bear a substantially constant relation to total soluble nitrogen. That this is so is now confirmed for worts prepared by the Recommended Method of the Institute of Brewing (P.S.N. = 0.94 × T.S.N.). It is therefore considered legitimate to determine total soluble nitrogen and to calculate a figure for permanently soluble nitrogen from this.
