Maltase produced by a brewing strain of Screen, cerevisiae has been purified by fractional adsorption on calcium phosphate gel followed by chromatography on alumina at constant pH by means of a concentration gradient of buffer solution. In this way, fractions have been obtained which, on the basis of their optical densities at 280 μ., are estimated to be 200 times as active as the crude starting material.
