Description is given of floor malting, with and without mechanical aids, box malting on the Saladin system, and drum malting by the Galland and Topf box‐drum systems. Plant and processes for decoction mashing are described in some detail, and methods of wort boiling and clarification are outlined. Long and short duration fermentation processes are next considered, leading to lagering, clarification by centrifuge and filter, and bottling.
