The factors causing deterioration of hops during storage have been considerably clarified. Thus it has been shown that deterioration of the α‐soft resin almost ceases when the hops are stored in the absence of oxygen; furthermore, conditions of low relative humidity retard deterioration. The dependence of deterioration on hop variety is maintained under all the storage conditions examined. It is concluded that deterioration is an oxidation process and need not normally be influenced by micro‐organisms.
