Two methods for the detection of fermentation by yeasts are described. Fifty yeast species, representing thirteen genera, have been examined and the results have been found to agree well with those obtained using Durham tubes. The new techniques depend upon the use of large inocula in comparatively small volumes of substrate and are so sensitive as sometimes to give positive results within 15 min. In addition, the small amount of medium required results in a considerable saving of materials with corresponding reduction in cost.
